My experience-A Canning adventure.

I thought I would share I alittle bit of an up and down. Today I made my first batch ever of Cowboy Candy/Candied Jalapenos for Christmas (They have to be canned for a few months before using, so I'm told). Now this was a great win for me, I haven't canned anything in a long time and it felt great. BUT sitting here now my head feels like its throbbing and I'm thinking back to all that was done and trying to think of ways to do it differently next time. 1. Cut pepper while sitting down and relaxing NOT on a cutting board that is to low. 2. A fan might be nice who knew you could get so hot standing next to a hot stove. 3. try to stretch alittle more often... UGH.... Anyways maybe it was the heat, the stess, the peppers, spices and other strong smells up my nose but neck hurts, head is starting to throb, alittle bit nauseous, and sound and light are alittle annoying.... But for some reason I'm still going to count this as a win, just because I can.....
